Welcome to another page of Pop and Mom's good recipes. Here are a few vegetable recipes and will add more when I get them. Please email me with any questions you may have. 2 cans pork and beans 2 cans ranch style beans 1/2 cup Hickory Smoke Heinz Barbeque Sauce 1/4 cup green onions 1/4 cup onions 1/4 cup bell pepper Saute' in butter. Season to taste with Tony Chachere all season. Simmer until done. |

2 quarts fresh green beans 1 large onion or 2 medium onions (saute') 1 large bell pepper (saute') 1 can sliced potatoes (add to beans after beans start to get tender) 1/2 small can stewed tomatoes or tomato sauce 3/4 can cream of mushroom sauce salt and pepper to taste garlic powder celery flakes parsley flakes 2 bay leaves 2 or 3 clove pods 1 teaspoon sugar (optional) Start with 1 cup water. Add 1/2 small can stewed tomatoes or 1/2 small can tomato sauce. Dissolve 3/4 can of cream of mushroom sauce. Add salt, pepper, garlic powder, a little celery flakes, parsley flakes, fresh green onions, 2 bay leaves, and 2 or 3 clove pods. May add 1 teaspoon sugar. Add water as needed. Cook until potatoes and beans are tender. |

1 lb. ground meat 2 medium size egg plant chopped onions (as desired) bell pepper (as desired) garlic (as desired) cooked rice Fry ground meat. Peel and dice egg plant. (use enough for dressing to be moist) When ground meat is cooked, add all of the above to meat. Cook until egg plant is done. Mix with cooked rice. Use desired amount of rice. (dressing should be moist) ***Note: too much rice will make it too thick and pasty. |

bell peppers (chopped fine and some for stuffing) onions (finely chopped) ground meat (mix beef and pork) rice (cooked) whole cooked tomatoes cheese bread crumbs or bacon crumbs salt garlic powder red pepper Cook onions and chopped bell peppers until done. Remove cooked bell peppers and onions from pot. Add a little oil. Fry ground meat until brown or done. Add onions and bell peppers to cooked meat. Add cooked rice. Season to taste. Add whole cooked tomatoes and cheese. Cook until it reaches a hard boil, then turn heat off. Drop whole cleaned peppers into hot water for a short time. Remove and add all cooked stuffing into bell pepper. Sprinkle crumbs on top. Bake for 1/2 hour at 350 degrees. ***Note: You can freeze in foil and cook later. Also, shrimp is wonderful to use instead of ground meat. |

1 large head cabbage 1 lb. ground meat and pork mixed 1/2 cup whole tomatoes (drain and keep juice) 1 can tomato sauce (for mixture) 3 cans tomato sauce (for covering rolls) 1/2 cup raw rice 1 medium chopped onion 1 chopped bell pepper 2 cloves garlic Separate cabbage leaves or place cabbage head in pot of hot water over low fire. (Just enough to keep water hot.) Pull leaves apart as they soften. Mix all ingredients. Place one tablespoon of mixture in center of cabbage leaf. Fold over and tack with toothpick. Place rolls in deep pot. Pour reserved tomato sauce and juice over all rolls. Add enough water to cover. Add a little salt and seasonings between layers in pot. When water starts to boil, reduce fire to low. Cover and cook about 2 hours. (Always cut the core of the cabbage out before putting into water. ***Note: I use about 3 cans tomato sauce and water to cover rolls. |

***Note: This recipe is for mustard greens, turnip greens, or any other type of greens. |
5 gallon or more pot 4 gallons cleaned greens (pull off stems and rough parts) 2 medium onions 1 large bell pepper salt and black pepper cayenne pepper garlic powder 6 slices of bacon 4 tablespoons cooking oil Saute' onions in oil until soft. Add bell pepper and saute' until soft. Cut bacon in small pieces. Add to onions and bell peppers. Cook until bacon is tender. Add 1 cup water. Add greens to fill pot. Put lid on. When greens cook down, keep adding remainder of greens until all are in. Cook until greens are reduced. Add seasonings to taste. (Keep a little water in pot while cooking) Cook until tender. Serve with corn bread or any Cajun dish. ***Tip: Cajuns eat greens cooked down a lot and it should have a "mushy" texture when done. |

Drop string beans in boiling water. Let come to a full boil for 4 minutes. Remove and cool off in ice water. Freeze in water in Zip Lock bags. |
