Corn Tomato Beef Soup


3 lbs. brisket or stew meat
2 large cans whole or fresh tomatoes
8 ears of corn (cut)
2 medium onions
1 bell pepper
3 cloves garlic
1 cup rice
salt
black and red pepper
2 medium potatoes if desired (cut in chunks)

Boil meat until tender. Add ingredients. Cook until done. Season to taste.



L.P.'s Hush Puppies


2 cups Gold Metal self-rising flour
1 cup yellow corn meal
2 teaspoons baking powder
1 teaspoon garlic salt
1/2 cup green onions
1/2 onion
4 cloves garlic
1 egg
1/2 teaspoon black pepper
1/4 teaspoon red pepper
1/2 teaspoon salt

Add just enough milk to mix thick. Let set 45 minutes to rise. Cook on medium heat until golden. *Note: some like to add a pinch of sugar.



Corn Bread


3/4 cup melted butter or oil
3 cups yellow corn meal
1 cup flour
4 tablespoons sugar
8 teaspoons baking powder
1 teaspoon salt
1 1/2 cups milk
2 eggs (beaten)

Heat 9" pan with bottom well covered with oil. Heat oven to 400 degrees. Mix all ingredients in large bowl. Pour into hot pan. Smooth oil on top of bread to form a crust. Cook 20-25 minutes. Check if done with toothpick. When toothpick comes out clean and crust is golden brown, it is done.



Baked Potato With Cheese


Potato
Egg
Milk
Salt
Pepper
Paprika
Grated cheese
Garlic
Onion powder

Bake potato. Remove from shell. Mix potato with seasonings, egg,  and milk. Fill empty shell with mixture. Sprinkle grated cheese over potato. Return to oven. Cook until cheese begins to melt. Remove and serve hot.



Mom Mom's Yam Casserole

8 medium yams
1 cup sugar
1 egg
1/2 cup butter
1 teaspoon cinammon
1 tablespoon flour
2/3 cup pecans (optional)

Boil yams until tender. Peel yams and mash in mixing bowl. Add all other ingredients and mix well. Pour into greased casserole dish and bake uncovered at 350 degrees for about 45 minutes to one hour.



Grape or Muscadine Jelly


3 1/2 to 4 lbs. muscadines
1 1/2 cups water
7 cups sugar
1 package Sure Jell
1 teaspoon butter
cheese cloth or fine cloth

Mash muscadines. Add 1 1/2 cups water tp pulp and juice. When water and pulp comes to a boil, cover pot and let simmer for 10 minutes. Remove and squeeze mixture through cloth. Should get 5 cups of juice. (Can add water to complete 5 cups if short.) Put 5 cups liquid in pot. Add 1 teaspoon butter and 1 box Sure Jell, stirring constantly. Bring to a rolling boil. Add 7 cups of sugar, stirring constantly. Bring back to rolling boil. Boil 1 minute. Remove from fire. Skim foam, if any. Put in jars quickly. Makes 4 pints. (Be sure jars and lids are sterilized).



Estelle's Fruit Salad


This is one of our traditional recipes. Mom Burleigh makes this every year at Christmas time and it is something we all look forward to eating every year.

8 apples (diced)
12 oranges (diced) (clean all skin off)
6-8 bananas (diced)
1 large can fruit cocktail (cut large pieces)
About (28 oz.) can sliced peaches (chopped or cubed)
1 can sweetened condensed milk
1 small can evaporated milk
sugar (suit to taste)
Cherries (large jar) with juice (chopped up)

Stir and mix. Should be juicy. Refrigerate.
