SEAFOOD



SHRIMP CREOLE

L.P. (Pop) Burleigh



2 lbs. shrimp
1 stick butter
4 onions
2 bell peppers
2 sticks celery (if desired)
1 can tomato sauce
1 can Rotels tomatoes (I use home cooked tomatoes, also)
Couple of bay leaves
A little thyme

Chop onions real fine. Cook until brown. Put other seasonings in with tomato sauce. Let simmer until cooked down a little. Add shrimp and cook on low fire. Can thicken with a little flour and water. Serve over rice.



L.P'S CRAB STEW



1 dozen cleaned crabs and claws
2 cups flour
2 medium onions
1 large bell pepper
1/4 stalk celery
garlic or garlic powder
2 cans tomato sauce
salt
red and black pepper

Cook flour in oil or oleo until brown. Add onions. Cook on low fire until onions wither. Add green seasonings. Cook until green seasonings are well cooked. Lower fire and add tomato sauce and water. Stir well until all is dissolved. Simmer on low fire for about 1 1/2 hours. Add crabs and claws. Let come to a hard boil. Lower fire and cook on medium heat for about 30 minutes. Sauce should be rusty color. Serve on rice or mashed potatoes.



CRAWFISH STEW

2 lbs. crawfish tails
1 1/2 cups crawfish fat
1 cup flour
1 can Rotel tomatoes
2 large onions
1 large bell pepper
1 stick butter
2 stalks celery
A pinch of onion tops

Brown flour. Add onions and cook until withered. Add other seasonings and cook until flour is dark brown. Add tomato and a little water. Stir until all of mixture is dissolved. Stir plenty. Let simmer until mixture is light brown. Tomato sauced can be added. Add crawfish and crawfish tails. Let cook on low fire about 20 minutes. Serve over rice.



FRIED OYSTERS

1 pint oysters
salt
pepper
flour for dredging
1 slightly beaten egg
1/2 cup crackers or bread crumbs

Dry oysters between towels. Sprinkle with salt, pepper, and flour. Dip in egg. Dilute with a little cold water. Roll in crumbs. Fry in deep hot pot. (375 degrees for 4-6 minutes) Drain on paper towel or brown paper.



POTATO FISH CROQUET

60% potatoes
40% fish
onion
garlic or garlic powder
salt
black pepper
red pepper
egg and milk
paprika
cooking oil

Boil potatoes until 80% cooked. Use ground fish or shredded garfish, catfish, or boneless. Chop onions fine. Mash potatoes and mix fish and potatoes together. Add beaten up egg, salt, pepper, paprika, a little milk with egg, and mix altogether. Can sprinkle a little bread crumbs or flour to make hold together. Heat oil at about 325 degrees. When making patties or croquets, use a bowl of flour on the side to powder hands. This keeps patties from sticking. Drop in hot oil. When they float or get golden brown, remove from heat and place on paper towel or brown paper.



SHRIMP PILAF

1 medium onion
1 bell pepper
1 1/2 cup rice (rice cooker cup)
1 can mushroom with juice (4 oz.)
1 can beef broth
1/4 lb. oleo
salt and pepper to taste
jalapeno pepper
1 lb. shrimp

Combine everything together and cook in rice cooker.
