PERSIMMON CAKE

Mom Burleigh


3 cups all purpose flour
2 cups sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 teaspoon soda
1 cup vegetable oil
3 eggs slightly beaten
1 1/2 cup persimmon pulp
1 cup walnuts (optional)
powdered sugar to dust cake

Mix all dry ingredients. Add other ingredients. Mix well. Pour into slightly greased bundt pan. Bake in 325 degree oven for one hour. Test for doneness. Let cool. Remove from pan. Dust with powdered sugar.



PEACH COBBLER

Mix 1 stick oleo and 1 cup sugar. Add 1 egg and mix. Add 1 cup flour and 1 cup milk. Alternate flour and milk. Begin with flour and end with flour. Add flavor of your choice. (vanilla) Use self-rising flour or if you use all-purpose flour, add 2 teaspoons baking powder. Pour into baking dish. Put one large can of peaches into pot and heat. Thicken fruit with corn starch. Pour fruit over mixture and bake at 350 degrees for 25 minutes or until golden brown.



BREAD PUDDING

Cream 1/2 stick softened butter and 4 oz. powdered sugar. Use half to generously coat a 9x2x13 inch pan. Reserve remainder.

2 cups sugar
4 whole eggs + 2 egg yolks
dash nutmeg
dash of salt
1 cup sweetened coconut
2 (12 oz.) cans evaporated milk
1 cup whole milk
1 teaspoon vanilla

Combine in a large bowl. Add: 1 loaf cinnamon-raisin bread. (1 lb. sliced) Push bread slices gently down into mixture so all slices are soaked. Let stand 30 minutes, stirring occasionally to bring slices on top down into the bottom. Pour into pan. Sprinkle pecan halves on top. Melt reserved butter and sugar mixture and pour over top. Place pan on cookie sheet and put in top third of preheated oven. Bake at 325 degrees for approximately 50 minutes.
